Quiche lorraine

Ingredients (for 4 people) :
  • Shortcrust pastry
  • Lean smoked bacon
  • 4 eggs
  • 1 small bowl of soured cream
  • 1 pinch of nutmeg
  • Salt and pepper

Preparation :
  • Line a large tart tin with the shortcrust pastry
  • Mix together the eggs with the soured cream (1 small bowl), a little salt, pepper and a pinch of nutmeg
  • Cut the bacon into small pieces and fry in the butter, then add to the mixture
  • Pour onto the pastry
  • Cook in a hot oven for approximately 25 minutes

Pork fillet with Mirabelles

Preparation : 20 minutes
Cooking : 40 minutes

Ingredients (for 6 people) :

  • 1 fillet of pork
  • 750 g. mirabelles from Metz
  • 50 g. butter
  • 2 dessert spoons of cognac
  • ½ glass of water
  • 1 dessert spoon caster sugar
  • Salt and pepper
Preparation :
  • Season the pork with salt and pepper
  • Heat a little of the butter in a pot and brown the meat
  • Discard the cooking fat
  • Add the remainder of the butter and cook on a low heat without a lid for 25 minutes
  • Remove the meat and keep warm
  • Wash and destone the mirabelles
  • Deglaze the pot with the cognac and a little water then add the sugar
  • Bring to the boil, add the mirabelles and cook for 5 minutes
  • Cut the meat into thick slices. Place in a serving dish surrounded by the mirabelles and pour over the sauce

Mirabelle Tart

Ingredients (for 6 people) :
  • 1 packet shortcrust pastry
  • 750 g. destoned mirabelles
  • 50 g. butter
  • 100 g. caster sugar
  • 1 egg

Préparation :
  • Place the shortcrust pastry into a greased tin and prick the base
  • Arrange the mirabelles over the pastry
  • Melt the butter and the sugar over a low heat
  • Remove from the heat and incorporate the beaten egg
  • Pour the mixture over the mirabelles
  • Cook in the oven at 170°C (gas mark 5/6) for 35 to 45 minutes

Mirabelles flambéed in caramel

Preparation :
  • Make a caramel using the cooking juice from the mirabelles and some sugar
  • Add a knob of butter
  • When the caramel starts to colour, add the destoned mirabelles
  • Coat with the syrup and spoon over vanilla ice cream
Serve immediately flambéed in a good quality mirabelle liqueur
